Fr. Kosicki’s Fruit Cobbler
2-20oz cans of fruit or 2 cups of fresh fruit
(cherries, apples, peaches, blueberries, or other fruit)
A touch of lemon
1 cup of flour
1 stick of butter
1/2 tsp of salt
1 tsp of baking powder
1 cup of sugar
1 tsp of vanilla.
Divide fruit evenly between two 8-inch square cake pans.
Mix together the flour, butter, salt, and baking powder with a fork, pastry blender, or knife.
Beat the eggs lightly, add sugar and vanilla, and blend into the flour mixture.
Dab the pastry mixture on top of the fruit.
Bake at 350 degrees F for 45-50 minutes. Done when fork or tester comes out of pastry clean.
